Michelin now lists 34 Prague eateries
Three venues hold their stars, and seven now are Bib Gourmand
Three restaurants in Prague retained their Michelin stars, and one new eatery earned a Bib Gourmand, raising the total in that category to seven. There are also 24 eateries in the relatively new Michelin Plate category, bringing the total to 34 places that offer a notable degree of cuisine.
Michelin stars are designated in travel guides put out by French tire company Michelin. The guides first started in 1900 and were meant to provide destinations for people in their newly invented automobiles, and of course to encourage wear and tear on Michelin tires along the way.
The stars are given out by anonymous inspectors, and restaurants can earn up to three stars, although the Czech Republic only has one-star restaurants. All three that have stars in the country are in Prague. The most recent addition was Field, which won its star last year. Alcron and La Degustation Bohême Bourgeois have had stars since 2012. One star means top quality ingredients are used and that dishes with distinct flavors are carefully prepared to a consistently high standard.
Field was called a chic restaurant with a warm, intimate feel run by two friends. “An eye-catching mural by artist Jakub Matuška is projected overhead and the Scandinavian style cooking is equally contemporary. Alongside wine pairings they offer non-alcoholic drink matches such as tomato, cucumber and chilli juice,” the guide states.
La Degustation Bohême Bourgeoise was praised for its precise, innovative and flavorful cooking and charming service. “This intimate L-shaped restaurant is hidden away in a historic building, down narrow lanes. Choose between two tasting menus: the six course option is inspired by the refined Czech cuisine of Marie B Svobodová's 19th century cookery school,” the guide states.
Alcron is an intimate, semicircular restaurant dominated by an art deco mural of dancing Manhattan couples by Tamara de Lempicka. “Choose 'hot' or 'cold' tasting dishes from an international menu; well-presented, creative, contemporary cooking [made with] top ingredients. There's a good choice of wines and staff are attentive,” the guide states.
The Bib Gourmand goes to restaurants that offer exceptional good food at moderate prices, according to local economic standards. Bib is a nickname for Bibendum, known in English as the Michelin Man, the company's rotund inflated mascot.
Eska, located in Prague's Karlín district, is new to the list this year. It joins the previously listed Aureole, Divinis, Maso A Kobliha, Na Kopci, Sansho and SaSaZu.
Eska is a café, bakery and restaurant in a converted fabric factory. “The dining room has a stark, industrial feel with exposed bricks, pipework and girders, and the open kitchen adds to the buzz. Old family favorites are given modern makeovers; much use is made of traditional techniques like marinating and fermenting,” the guide states.
There are also restaurants listed a Michelin Plate, which are considered worth checking out. There are 24 Michelin Plate (L' Assiette Michelin) restaurants in Prague. These places offer a very good standard of a food and wine experience, but don't quite rate a star. The designation was introduced in 2016. Places not worthy of a gourmand's attention are not listed. The guide has no negative reviews.
