We also serve about 180 types of champagne for various palates, not only from big, well-known houses, but also from small family producers which are nonetheless interesting. “From the chef’s point of view champagne is ideal because it goes with almost everything, from oysters to desserts,” says our executive chef Jiří Nosek.
We build on natural tastes, the highest quality ingredients, years of proved methods and recipes, which we work with in our own way. We try new techniques and compose new meals. We collect inspiration from all over the world, as well as in nature.
Seasonality takes on broader meaning – it is not only about one main ingredients, but also about other possibilities which nature offers in the given season. “Herbs, flowers, mushrooms… we pick everything which grows in the forest and on meadows in the area of Český kras. And from all ingredients we are able to take maximum advantage with new methods,” explains executive chef Jiří Nosek who has discovered and applies about thirty seldom used ingredients. We take care of their highest quality and carefully choose everything from flour, butter, herbs, potatoes, to the main materials – premium meat and seafood.
