American food - not just Burgers - Issac (USA)

Colours of Prague, a new interview series lets you meet interesting people in the Czech capital

Isaac came to Prague from New York ten years ago and like so many others, staying here permanently was never part of the plan. But one thing led to another and the ethos of this city and its people captured his heart.

Young people in the Czech Republic have been developing a taste for quality food from all over the world and Isaac jumped at the challenge to show that American food is about more than just burgers and fries. He was trained in fine French restaurants in New York, and also by great American old school chefs. Good food takes work, he says. Some of the meat he is offering takes 16 hours to cook in a wood-fired smoker to develop the characteristic deep BBQ flavours.

Cooking offers an instant reward, he says. But he also enjoys the whole lifestyle of a chef, the late night work, the energy in the kitchen, working with fire and good music. He runs a catering business, but his joy is to meet people. So look out for Dirty Dog Barbeque next time you visit Manifesto and ask for Isaac.
