Colours of Prague, a new interview series lets you meet interesting people in the Czech capital

Matteo de Carli has worked as a chef in Switzerland, Ireland, Dubai and the US, where he extended his knowledge and experience.

Seven years ago, he came to Prague and opened Casa de Carli. After New York, Prague was a bit of a culture shock but in a positive sense. Prague was less stressful, greener, and he could really enjoy life with his family here. His passion as a chef comes from his grandparents and all those family feasts during weekends. Consequently, he went to cooking school and then followed his passion all over the world. For him, food is not only about preparation but also about the experience combined with it. So, it was only logical for him to expand further. You might have heard about Maso Je Maso (Meat Is Meat) already.

For Matteo cooking is never the same. It evolves constantly. It is driven by fresh seasonal ingredients and the contact with people, which he currently enjoys a lot at Manifesto, where you can experience the flavours of the sea at Ryba Je Ryba (Fish Is Fish).
